Snacks 2



Chicken lollipop!!!
ingrediants:

chicken wings-500gm
gingergarlic paste-1tbsp
soya sauce-1tbsp
chilly sauce-2tbsp
chilly pwdr-1/2tsp
salt
corn flour
egg-1/2
bread crumbs

methode:
make lollipops n marrinate it vth abve ingrediants except bread crumbs for 2hrs.roll it in bread crumbs n deep fry it in a low flame.
 
 
FRIED CHICKEN

chicken
chilly powder
tandoori masala
lime
salt
mix all nd cook in low flame.
(make sure there was no water left)
take chicken pieces dip in maida then egg then breadcrumbs.
deep fry.....
 
 
whole masala chicken with egg/potato cutlet


Ingredients:
-whole chicken
-3-4 medium sized potatoes
-2-3 medium sized onion
-4 eggs
...-Various masala, look below for further directions
-bread crumbs

egg and potato cutlet:
step 1 -
Fry finely chopped onions in oil until golden brown, boil potatoes and eggs in water.
step 2 -
Mash potatoes, mix with onions, 1 tsp salt, 0.5 tbsp coriander powder, 1 tbsp garam masala, 0.5 tsp black pepper, and 0.5 tbsp cumin powder. Mix all together.
step 3 -
Make a cover around the eggs for each egg individually.
step 4 -
Heat oil, dip cutlet into egg then bread crumbs. Fry in oil until light golden.
step 5 -
Cut in half after it has cooled.

whole masala chicken:
step 1 -
Mariante chicken over night with
1. 2-3 tbsp coriander powder
2. 2 tbsp cumin powder
3. 1 tbsp garam masala
4. 0.5 tsp tumeric
5. 1 tbsp chilli powder
5. Add 2-3 tbsp oil
6. Add 2-3 tbsp ginger garlic paste
7. Add 1 cup of yoghurt
8. Add 1/4 cup lemon juice or squeeze lemon
9. Add coriander leaves for garnish
10. 0.5 tbsp mint leaves crushed

Make sure to coat all over chicken, add more masala if necessary.

step 2 -
Place in fridge over night

step 3 -
Cook in oven at 160C for 2-3 hours and cover on top.

step 4 -
Serve with egg/potato cutlets.

 

Bhetki Maach Butter Fry (Batter Fry) 

The Fish

1/2 kg Bhetki Fillets cut in square pieces
200 - 250 gm of White sunflower or any Oil for Cooking
Marination
1 tbsp Ginger Paste
1 tbsp - Garlic Paste - for gods sake dont use the ginger-garlic or any readymade paste as they come with vinegar and might spoil the taste.
1/2 Lime
1 tsp of Salt.
1 tsp of Green Chilly Paste
Corriander paste (2 green chillies along with 4-5 stems of Corriander leaves wet grinded)
1/2 tea spoon or one pinch jeera powder.
Batter
6 tbsp of Corn Flour
2 Eggs
1/4 cup of Milk.
1/2 spoon black pepper powder
1/4 tea-spoon baking powder (optional)
1 spoon tamarind powder
The Process
Arrange all the pieces of fish in a big plate ( no metal) - Mix all the ingredients of marination in
a small bowl thoroughly. Apply to both sides of the fish and leave it for a while. 15 minutes to 30 minutes should be OK.

For the batter - mix the corn flour in milk with constant stirring leaving no lumps - once done mix the eggs until smooth.

Heat oil in the kadai - its better to pour all the oil in the beginning so that you do not worry later. Add two or three whole black pepper to flavor the oil. Once the oil is hot and you can see smoke leaving the kadai - drop a small amount of batter - just a drop to see how fast it turns brown and then black. Now reduce the flame to medium ( else the fries will burn out) . Dip the fish in the batter so as both sides are coated properly - and then drop them in the oil. Press it down with a flat spoon and turn t it to check both sides. Once brown - remove it and keep it on a plate with adequate tissue paper covered to soak the excess oil. 

 
fry chicken....

2 boneless chicken breast(cut into small cubes)
1 egg white
salt,black pepper,
jeera powder,
dhaniya powder
gingar and garlic paste
lemon
chilli powder


mix all the ingredients together leave to marinade 1/2 hour then coat with bread crumbs and deep fry over medium heat.
 
 
New York Buffalo Wings

Serving Size 6

Ingredients:
12 Chicken Wings
1 Cup White All Purpose Baking Flour
1/2 Cup Hot Sauce
1/4 Cup Unsalted Butter
1 tsp hot cayenne pepper (red chili powder)
1/2 tsp Salt
1/2 tsp coarse ground black pepper
1/2 tsp of ground garlic powder
vegetable oil for deep frying

Preparation Instructions:
First of all heat the oil to 375 degrees Fahrenheit, or 190 degrees Celsius. While your oil is heating, take out a small saucepan, and add into it the unsalted butter, hot sauce, coarse ground black pepper, and garlic powder. Heat these ingredients over low heat, stirring until the sauce is even and thick. Once the sauce is done, remove it from the burner, and set it aside. In a big mixing bowl, and sift together the white all purpose baking flour, hot ( red chili powder) cayenne pepper, and salt. And evenly coat your chicken wings in breading base, and then set them in a dish. Place the dish into the refrigerator, and let the breaded chicken chill for at least one hour. Once chilled, fry your chicken in the hot oil for roughly 15 minutes, or until the chicken is crisp and golden. After your chicken is cooked, coat each wing in the hot sauce mixture and served with cheese dip and say wow 

 
Sesame Honey Chicken Wings

Ingredients:

Chicken Wings: 15 pcs... See More
Oil for deep frying

Marination:
Flour 1 cup
Corn flour 1/2 cup
1 egg
Salt & Pepper to taste
water to make paste

Sauce:
Oil 1 Tbspn
Honey 4 Tbspoon
Sugar 1 Tbspn
Salt 1/2 Tsp
Soya Sauce 1 Tbspn
Green Chillies 5-6 (thin sliced)
Sesame seeds (sprinkle over)

- Marinate the chicken with flour, cornflour, egg, salt, pepper and water to make a thick paste.
-Leave it for 2-3- hours.
-Deep fry the chicken in oil.
-In a separate pan, take 1 tbspn of oil, add 1 Tbsp of chopped garlic & let it turn colour then add honey and then keep stirring, add sugar, salt, soya sauce and then deep fried chicken.
- Stir the chicken in that sauce in that separate pan. Add on green chillies and after a minute add sesame seeds on it.
- Keep stirring and after a minute, take it out in a dish and serve hot. 

 
Fried chicken with Rice and Veggies.

Recipe for the Chicken:

I added Soya Sauce, Salt, Chilli, vinegar and fresh garlic and some other spices to taste and left it to marinate for about 1 hour.

In the mean while i beated 2 eggs in a bowl and in a different large bowl i put bread crumbs and oregano and some herbs to make the coating of the chicken.

Once the chicken is marinated i dipped it in the egg bowl and than covered it with bread crumbs and lightly fried the chicken.

Than once all the chicken pieces were done i put them in the oven and fully covered the entire dish with foil to keep the chicken nice and soft.
   
 
""Fried Chicken (so quick and yummy) literally melts in your mouth. (But this chicken is still only half cooked as the rest will cook in the oven)

Ingredients:

Chicken Pieces (Your choice of chicken)
2 gloves of minced garlic
Soya Sauce
Vinegar
Salt and Pepper to taste
Paprika
Oregano
and any other herbs of spices that you would like to use

Instructions :

Marinate all the chicken using all the ingredients. refrigerate for at least 1- 2 hours.

On low Heat in a pan add some oil (enough so the chicken can fry itself).

Fry the chicken so its only half cooked, than put them in another pan which should be covered with foil as you can see in the picture.

Once all the chicken is fried put them all in the pan and than cover the pan with foil so that the chicken can cook itself in the oven. Also covering the chicken allows the steam to stay in the pan and allows the chicken to stay extra soft which melts in your mouth.

Than ENJOY when its cooked and you can serve it with anything or even eat it by itself :O) 
 
Chicken baked in foil with Spiced jacket potatoes

Cut up a chicken into 12 pcs, marinate them in Lemon juice, pepper, red chilli flakes, i added a bit of shan chicken jalfrezi masala too and lots of garlic.
about 4 tbsp of soy sauce and 2 tbsp of chinese chilli saucefor giving it a nice reddish color.
peel potatoes and marinate them separately in the same mixture too for about 2 hrs. the chicken id OK even if you marinate it for an hour.

wrap each piece in foil separately....

preheat the oven at 200 degrees and keep the potatoes in first, after 20 mins, keep the chicken in the oven aswell n bake for about 50 mins to one hour. serve while hot. they r yummy!!

Add salt to taste *

(potatoes require a bit more salt than the chicken
 
Recipe:

Marinade the chicken breats in Peri Peri sauces (for two chicken breast halves, I use 2 tablespoons of Nando's Extra Hot Peri Peri Sauce and 2 tablespoons of their Wild Herb/ Peri Garlic Sauce. It's up to you which ones you want to use). Try to marinade overnight. It makes the chicken more flavourful. You can marinade with whatever you want btw. But since my husband loves Nando's, I wanted to try and bring it home. =) Make sure the chicken pieces are of adequate size. Too small or too big and it'll be either too dry or too tough. =)

STEP !:

First you want to cook the chicken breats on high heat for a short while to seal the juices in. Heat a grill pan, oil lightly (enough to not let the chicken breats stick to it of course) and cook each side of the chicken breast for about 90 seconds.

STEP 2:

Pre heat the oven to 400 F

Put the chicken on a baking tray and put 1/2 tablespoon of butter on each piece of chicken.

Place the baking tray in the oven and wait 8-9 minutes.

Use tongs to turn the chicken over then wait another 9 minutes.

(The original recipe says 9 minutes but since I started grilling the chicken before I cut down a little on the baking time)

SAUCE:

I just mix the peri peri sauces with mayo. =)

Serve with french fries/wedges/coleslaw
 
 
fried CHICKEN-VEG STICKS

Chicken marination:-

chicken boneless cubes half kg
salt 1/2 tea sp
blak pepper 1/2 teasp
soya 1 tbsp
vinegar 1 tebsp
chillisauce 3 tbsp
ginger garlic paste 1 tabsp
cornflour 1 tab sp
peprica 1 teasp
crush chilli 1 tsp

Method:-
mix all the ingredients with chicken n keep for about half an hour atleast
now add 2 tb sp oil n add this chicken n cook quickly just to dry up the water but chicken should not get over cookd otherwise will not stick to the shashlik sticks.


Veg:-

capsicum
onion
bread toasted

cut capsicum, onion n toasted bread into small squres(about an inch)
now fix them on shashlik sticks one by one..(chicken n bread should go together, gives better taste)
u can aslo use tooth pick if shashlik sticks are not available but then chiken n veges should be cut even smaller.

now dip these stick in beaten egg n deep fry(in hot oil), sprinkle some chat masala n lemon on top n enjoyyy the yummiest fried chicken sticks.. 
 
Ramadan Treats: 'Colors in a stick'
the recipe is actually pretty simple

take different colored capsicum: red, yellow and green
Carrots, tossed in Ghee
onion cut into half and lightly tossed in Ghee
Chicken breast pieces, marinated for a while and fried afterwards
paneer

cut all the ingredients in cubes

then just add them in sashlic sticks
then in a tawa, add in a little oil/ghee and toss the sashlic sticks, then the paneer melts and it tastes good..:)

the more color u add into, the better it looks..:)
