Lamb Khichri


1) chop 3medium onions you'll also need 1tsp garlic and tsp ginger




2) get 1cup basmati rice and 1cup red lentils
 
 

3) wash and soak
 

2) you'll need 1 and 1/2 cup boneless meat
 

3) heat up 1cup ghee in a pan
 

4) fry the garlic, ginger and little bit of the onion till brown
  


5) add these spices; cardamon, bayleaf, paanch puran(optional), cloves. cinnamon, whole cumin seeds and star anise
 

6) add rest of the chopped onion, 1tbsp salt and the meat. cook on medium heat for 40mins. stir in between
 

7) add the spices after 40mins (on the next photo)
 

8) 1tsp turmeric(haldi), 1/2tsp curry powder and 1tsp cumin(jeera) powder and and 1tsp coriander(danya) powder. stir in the powders and cook for further 5mins on medium gas 
 

9) drain of the water from the soaked rice and daal and add to the meat 
 

10) stir well add few whole green chillies and leave covered for 3mins on high gas 
 

11) add boiled water 1 and 1/2 inch above the rice that's probably about 1 and 1/2 cup water. let it come to boil.
(the rice needs to have a bit of a mashy texture so if you think you need more water do add some more) 
 

12) once the water is soaked up by the rice put the heat down to low. 
 

13)give the rice a stir. cover and cook for 10mins on very low heat, until rice is cooked 
 

14) garnish with coriander 
 
 Serve it Hot..
